In India, the mango is revered as the “king of fruits” due to its nutritional properties, affordability and availability. Now that mangos are in season, serve them up with sweet sticky rice. Combine coconut milk and sugar for a homemade take on the Thai classic. Artfully slice tender mangos and pair with lime for a tangy twist.
Ingredients:
- 1 cup glutinous (sticky) rice
- ½ cup and 1 tablespoon of white granulated sugar
- 1 cup water
- ¼ teaspoon salt
- 1 13.5 ounce can of coconut milk
- 1-2 mangos
Preparation:
- Rinse rice and let soak for at least 30 minutes.
- Add rice and 1 cup of fresh water to a pot and bring to a boil. Cover and reduce heat. Simmer until water evaporates.
- Mix one can of coconut milk, ½ cup of sugar and ¼ teaspoon of salt and bring to a boil. Stir the cooked rice into the mixture and let it cool for one hour.
- Serve rice with sliced mango.
